I’ve been following the Weight Watchers Filling and Healthy Diet now for the last 5 months. In that time, I’ve managed to shed almost two stone and have reworked my eating habits, most of the time. I’ve developed a penchant for wholegrain rice and pasta, become a Diet Coke addict and pared down my takeaway habit a fair bit – and most weeks it shows. The last few weeks however, I’ve been quite bold, letting the wagon roll away, and its showing.
I need easy dinners, ones I won’t think are a million hours long to make when I’m exhausted after work and have a very active baby to put to bed. Quick, easy and tasty, and diet friendly – that is the order of the day.
I discovered a recipe for Diet Coke Chicken, which is a winner in our house as it hits all the boxes. On the Filling and Healthy diet, this is completely free (yay) allowing me to keep my points for precious curly wurlies and wine
Ingredients
2 chicken fillets, diced
One small onion, chopped up small.
One can of Diet Cola
300ml Passata (I got mine in a resealable bottle in Supervalu, 2 for 2 euro at the moment).
Wholegrain rice
1. Fry the chopped up chicken and onion in fry light oil or another lo-cal equivalent
2. When chicken is browned, mix together the can of diet cola and passata and pour the mixture over the chicken.
3. Let the mixture reduce by keeping it uncovered and on heat
4. Serve with wholegrain rice once the mixture has thickened to a consistency you like.
It’s a bit of a BBQ sauce that doesn’t feel like its lacking in taste but is diet friendly, and takes about 15 minutes to make. Score!
